Way back in 1443, the iconic polychromatic-tiled Hôtel-Dieu (Hospices de Beaune) in central Beaune was built to take care of the sick and since Guillemette Levernier made the first gift of vineyards to them in 1457, this tradition has continued for five centuries. The estate currently has around 60 hectares which the majority are used for Pinot Noir production with the rest used for Chardonnay. Around 85% are premier crus and grand crus. They have entrusted 22 winemakers to produce wines and sell their productions at an auction on every third Sunday of November and is now probably the most famous wine charity auction in the world. All proceeds are invested back into the hospital and to conserve the beautiful Hôtel Dieu. One of the entrusted winemakers is Albert Bichot, a sophisticated estate that guarantees great wines.

The name "Guigone de Salins" comes from the wife of the founder of Hospice de Beaune, and the terroir has only 2.65 hectares which 1.2 hectares come from Les Bressandes, one of the top premier crus in Beaune producing powerful and subtle Pinot in the village. The vines were planted in 1960s, 1977 and 1980 thus offering complexity and structure to be a compelling wine to enjoy. This bottle offers a "nose both powerful and subtle, with a mix of red fruits followed by tasty aromas. Good length and density, with racy tannins" - Hospices de Beaune.
