Born into a family with deep roots in Burgundy, Romaric Chavy started his journey in wine at the mere age of 12. He worked under the shadow of his godfather Francois Mikulski in Meursault, then later travelled to different parts of the world including Languedoc, Spain and South Africa. Since 2005, he has been working with his father, Hubert Chavy, the 6th generation of the family at Domaine Chavy-Chouet. Nowadays Domaine Chavy-Chouet owns around 40% of vineyards in Meursault and 40% in Puligny-Montrachet. The wines are rich and always energetic combined with power, finesse and expressiveness; and many of the wines are usually enjoyable at a young age. The family owns a monopole “Clos des Corvees de Citeau” located in Meursault since 1893. The climat is surrounded by walls so it is given the name “Clos” and there is only 0.9 ha of vineyard. The walls give protection to the climat and the vines enjoys shelter as well as higher temperature than their neighbours. An interesting vineyard to explore and Vintage 2017 certainly comes with sheer performance in which Neal Martin awarded it with 92pts and said that the aftertaste “is pleasing and urges you back for another sip”.

Domaine Chavy-Chouet Meursault Clos des Corvees de Citeau Monopole 2017 (Ex-domaine) HK$380 per bottle, minimum order 3 bottles 92 pts Neal Martin The 2017 Meursault Clos des Corvées de Citieau is a one-hectare monopole that is part of L’Ormeau on clay soil that is relatively flat compared to other climats. It has a generous bouquet with white peach, almond and hints of white chocolate that unfold in the glass. The palate is well balanced and fresh despite the lower acidity, hints of orange rind and quince with a taut and quite linear finish. This feels nicely coiled at the moment and the dab of ginger on the aftertaste is pleasing and urges you back for another sip. Domaine Chavy-Chouet Bourgogne Blanc les Femelottes 2017 (Ex-domaine) HK$1,200 per case of 6*75cl 90pts Neal Martin The 2017 Bourgogne Blanc Les Femelottes comes from five parcels from 15 to 60 years old vines adjacent to the Puligny-Montrachet village crus. It has a lovely, almond and white chocolate scented bouquet that is very well defined. The palate is well balanced with a fine thread of acidity, a touch of bitter lemon and frangipane towards the composed, quite phenolic finish.
