While we are swirling the Burgundy Pinot Noirs or Chardonnays in our large tulip-shaped glasses, don't forget there's also Amarone that works really well in the Burgundy glass too! Amarone is one of the areas in Valpolicella of Verona, Italy, that produces some of the richest and heaviest-bodied wine in the world. The wines are made using a unique drying method called “Appassimento” in which grapes are dried on straw mats for up to 3 months to concentrate the sugars and flavours. Zyme is one of the producers that takes on this same method for their blend of 15 different red and white grape varieties! Founded in 1999 by Mr Celestino Gaspari, who worked with his father-in-law Giuseppe Quintarelli for 12 years to acquire valuable winemaking experience and knowledge for this legendary winery, Zyme produces fantastic lines of wines using the traditional Amarone method and they have put tremendous effort on some inventory wines such as Harlequin and Kairos. Both are full and fruitful red wines that offers extraordinary tasting experiences. Production is minimal and they are not easy to find in the market, when we saw mature Harlequin and Kairos available in the market we were adamant that we had to get these into stock -

Sweet aromas of roasted espresso beans lead to wild cherries, mint, licorice, blackberry jam and star anise as this opulent, full-throttle wine shows off its inimitable class and pedigree. Today the oak remains a touch intrusive, particularly in the tannins, but there appears to be more than enough density in the fruit to provide balance. The finish is eternal. This is a profound effort from Celestino Gaspari and his team. Harlequin is made from as many as fifteen different varieties. The grapes go through a brief drying process prior to being vinified. The wine is then racked into French oak, where it spends two full years with no subsequent rackings. Anticipated maturity: 2016-2026. Zyme Kairos 2005 HK$950 per bottle Blended with over 15 grapes varieties, aged in French oak barrels for more than 36 months 93 pts Antonio Galloni The 2005 Kairos is a dark, mysterious wine laced with plums, wild cherries, tobacco, new leather and spices. It shows marvelous texture and depth all the way through to the captivating finish. The is a fabulous effort in a vintage that was challenging in Valpolicella. Kairos is a blend of fifteen varieties. The grapes go through a brief drying process prior to being vinified. The wine is then racked into French oak, where it spends two full years with no subsequent rackings. Kairos is essentially the sibling of the estate’s flagship Harlequin and is only made in vintages not deemed important enough for that wine. The 2005 is impressive. Anticipated maturity: 2012-2025.
