When Nicolas Maillart took over his family's estate in 2003, he overhauled the entire operation in both the vineyards and cellars, eliminating chemical pesticides and herbicides, ploughing his vines, and installing a new press and other vinification equipment. Since then, he has been making refined, rich-textured Champagnes such as the Platine Brut NV, a blend based heavily on Pinot Noir. It uses a high percentage of Reserve wine that contributes to its complexity, and then uses a portion of oak-fermented wine to increase its breadth and dimension. This is a house champagne for people who look for extraordinary quality with a more-than-friendly price tag at only HK$350/bt.

Serious opulence and finesse come from this wine. A perfect example of Grower Champagne with a complete finish. Fulsome color and big-boned, this is impressive, the 6 g/l of residual sugar finely knit into a texture of ripe, red-berried fruit and self-evident expertise. Ethereal poise, with just a hint of spice. Immediately vital on the palate. Very chewy and demanding, serious but exciting. Citrus fruit with complexity.

Michael Edwards: Opulent and finessed.
Simon Field MW: Fulsome colour and temperamentally big-boned , this is an impressive example. The six grams of residual sugar finely knit into a texture of ripe, red-berried fruit. The finish has an ethereal poise, brought down to earth by just a hint of spice.
Tim Hall: Immediately vital in the mouth. Very chewy and demanding, a serious champagne but pretty exciting. Citrus character but with complex fruit and a pretty lingering finish. I like this!
