Charles Dufour, a young and forward-thinking winemaker who took over a mere 6 hectares of vineyard in Cote des Bars and started his adventure to make some stylish Champagne. He retains old vines, works with natural yeasts for fermentation (never adopts sulphur dioxide) and adds extremely low dosage in all his wines. This stylish grower has reminded us of some of the most thrilling bubbles tasted over the years. Production is minuscule - only a few thousand bottles per year - and when it appears in the market, it gets sold out quite instantly.
