There are generations of Pavelots from a huge family tree who have been maintaining wine businesses in Savigny-les-Beaune and Pernard-Vergelesses, and one of the smaller family-run domaine, Domaine Pavelots in Pernand-Vergelesses, has been run since the 1990s by Luc and Lise Pavelot who are brother and sister. Before working together, Luc worked in vineyards in California and Lise absorbed her skills in Dagueneau in Loire - experiences which equipped them with techniques as well as forward-thinking mindsets. With that, they turned their domaine to be fully organic in 2009.
Luc and Lise’s domaine is only own around 9 hectares big, lying in Pernard-Vergelesses and Corton. Their wines are usually sold out once released, especially their Grand Crus thanks to the very reasonable prices which are highly appreciated locally as well as other neighboring markets. We have tried two samples of Pernard-Vergelesses and Corton Charlemagne 2014 yesterday and think the Corton is brilliant. Considering 2014 is a fantastic vintage of white Burgundy, there aren't many Grand Crus you can find priced below HK$700 per bottle so we highly recommended Pavelot’s Corton Charlemagne that gives impressive focus and depth as well as richness of fruits.

40% new barrels with around 12 months oak maturation. Strong citrus and toasty touches with tropical fruits finish. Fantastic depth here, medium to full bodied which has great balance of acidity which are not usually seen in Corton Charlemagne. Approachable now but worth to age for another 3-5 years.
