A pâtissier turned vigneron, Dominique Laurent set up the Domaine in 1988 and initially bought young wine from growers but soon he sourced grapes and handcrafted the Burgundies himself - all with the philosophy of using only the best ingredients and thus works extremely closely with his growers which most of whom are some of the biggest names in Burgundy, keeping him busy throughout the year. He focuses on buying old vines (vieilles vignes), and even specific plots of old vines, across many appellations in Bourgogne as he believes that they offer the complexity and texture to the wines; and he uses the highest calibre of oak which perfectly integrates into his wine. His style in winemaking is distinct in which he applies more oak than most other winemakers in Burgundy, combined with a minimal intervention approach and bottling by hand without filtration or fining, thus creating very powerful, richly-flavored and complex wines which at the same time express the fundamental elements of each terroir very well.
