Established back in 1870 by Arthur Trapet, Domaine Trapet is located in Gevrey-Chambertin and now owns 12 hectares of vines with considerable holdings throughout the village all the way up to the Grand Crus of Latricieres, Chapelle and Chambertin. Currently run by Jean-Louis Trapet, who married to an Alsacienne, Andrée, they together maintain links with and make wine from Alsace, though production remains firmly centered on Gevrey-Chambertin. Though the Domaine remains somewhat old-school practices in the cellar, they have shown tendency for viticultural foresight throughout their history, for example, seizing grafting of vines as a solution to phylloxera in the late 19th century which their survived vines became vine material use to re-plant the region after the phylloxera; and nowadays, Jean-Louis has moved the Domaine to take on a biodynamic farming since the mid-1990s and certified since 1998 by Biodivin and 2005 by Demeter.
The winemaking approach at Domaine Trapet is partial destemming, implementing a cool pre-fermentation maceration before a long fermentation, then the descent by gravity of the wine to the barrel cellar, with 30 to 75% new oak used depending on the cuvée. No sulphur is used throughout the process with exception of a small dose at bottling. The resulting wines are succulent, rounded and some of the liveliest wines from Gevrey.

1999 Domaine Trapet Pere et Fils Chambertin Grand Cru HK$3,950 per bottle
6 bottles available, ETA 4 weeks 93pts Allen Meadows It had been quite a long time since this last came my way and I'm happy to say that it is still drinking beautifully well. Somewhat toasty secondary aromas offer up plenty of spice, game and earth nuances where the latter can be found in abundance on the velvety and impressively dense big-bodied flavors that possess excellent volume and power, all wrapped in a mineral-driven and beautifully long finish where the toast component telegraphed by the nose reappears. For my taste this is drinking as well now as it's going to even though it should easily be able to hold at this plateau for years to come. Subject to final confirmation.
