Sylvain Pataille is an exciting young grower in Marsannay. He trained as an oenologist in Bordeaux, and still consults to 15 or so domaines in Burgundy. His family had 4ha of vines in 1905, but lost them during difficult financial times. He began cultivating a small parcel of vines in Marsannay in 1999, with only one hectare to begin with, then with 4ha by 2001, and now has 14ha mainly on 25 year rental agreements, all in Marsannay, the northernmost, and most recent (1987) AOC of the Cote de Nuits, and are all undergoing conversion from organic to biodynamic cultivation. He currently produces 12 cuvées, including not only red, white and rosé Marsannay (Marsannay being the only appellation in the Côte d’Or permitted AC rosé), but also Aligoté, Passetoutgrain and Bourgogne Blanc and Rouge. He prioritizes low yields, ploughs his land by horse, and works according to principles of organic and biodynamic principles. The wines are made with some whole-cluster pressing, indigenous yeast fermentation, 15-30% new oak, and low sulfur doses only at bottling.
