The iconic polychromatic-tiled Hôtel-Dieu (Hospices de Beaune) in central Beaune currently owns around 60 hectares which the majority are used for Pinot Noir production and the rest used for Chardonnay, in which around 85% are premier crus and grand crus. They have entrusted 22 winemakers to produce wines and sell their productions at their auction which happens on every third Sunday of November with all proceeds being invested back into the hospital and to conserve the beautiful Hôtel Dieu. One of those entrusted winemakers is Lucien Le Moine - a micro-negotiant but highly regarded, buying premium grapes from only 1er and grand cru growers to produce what is currently considered one of the most highly collectible Burgundy reds and whites. Lucien Le Moine actively participates in Hospices de Beaune's auction every year and is regarded as one of the best owners to take care of the barrel. Set up by Mounier and Rotem, Lucien Le Moine produces a wide range of wines which are all aged in a cool and humid cellar that is rarely found in Beaune and they claim to undergo the longest fermentation in Burgundy, making their wines complex, powerful and always age well.
